Trillium Cellars Dinner with Head Winemaker Allison Findlay

Trillium Cellars will host a dinner at The Chef’s House on Wednesday, June 18th.

The evening will feature five Trillium Cellars wines, paired with a five-course menu created by George Brown College students under the tutelage of Chef instructors.

Trillium Cellars is a unique collaboration between George Brown College and Niagara College.

With VQA wines produced by Niagara College students, label artwork created by George Brown College design students, and varietals curated by George Brown College hospitality students, these VQA wines are exclusive to GBC and are a testament to the innovative and groundbreaking programs that make Ontario’s colleges a leader in applied arts, technology, and skilled trades education.

Allison Findlay, Head Winemaker, Niagara College

Originally from Dryden, Ontario, Allison began her journey in plant science before discovering a passion for Ontario wine during a visit to Niagara. After earning a B.Sc. from Lakehead University, she graduated from the Niagara College Winery & Viticulture Technician program in 2014.

Her winemaking career has taken her from harvests in Australia and Oregon to roles at local wineries, eventually joining Flat Rock Cellars in 2016. There, she rose to Head Winemaker, crafting award-winning wines—including a Best in Show at the 2022 Decanter World Wine Awards.

In 2022, Allison returned to Niagara College as the Teaching Winery’s first female Head Winemaker, continuing a tradition of NC grads leading the program.

The Chef’s House is a one-of-a-kind student-operated restaurant in Canada, located in the heart of downtown Toronto. It’s an innovative, student-focused concept restaurant, where George Brown Centre for Hospitality & Culinary Arts (CHCA) students have the opportunity to learn through experience. Students are mentored by dozens of professional staff, using their skills to provide elevated dining experiences to guests for real-world experience and education. Students from all over the world attend George Brown College for this exclusive program, building the next generation of hospitality and culinary talent.
